Marcus Wareing challenges the first pair of professional chefs to showcase their classical techniques and fish preparation expertise by cooking squid topped with a herb vinaigrette on toast, paired with red wine. Meanwhile, the other two chefs face Monica Galetti's pastry challenge, creating a coffee caramel poached pear accompanied by a silky praline cream and muscovado crumb. Following that, all four chefs prepare their signature two-course dishes. As always, only the top contenders will advance to the quarter-finals.
